At The Keeper’s Kitchen Inn, even the tiniest of bites tell a story. Our amuse-bouches are crafted with creativity, intention, and a deep sense of place. They are little surprises that set the stage for the meal to come which is one of the reasons they have become our favourite dishes that we serve.

These tiny morsels serve as an introduction. They are a hint of what lies ahead, and a way to set the tone for our guest's culinary journey. Each amuse-bouche is an expression of our love of cultural food-ways, our dedication to foraging wild edibles, and our joy in sharing something that is perhaps unexpected, and most times deeply rooted in tradition.
Elevating Tradition: The Republic Touton Experience

This bite-sized creation pays homage to the beloved Newfoundland touton, a humble piece of fried bread that has graced tables for generations. But in our hands, it transforms into something elevated yet unmistakably familiar. We keep the essence of the touton intact, but miniaturize it to a single, perfect bite. Atop this golden round of bread sits a mound of our own pulled pork, slow-cooked to tenderness and infused with just the right balance of sweet, smoky, and savoury flavours. A drizzle of in-house chipotle mayo adds a hint of spice, while a topping of pickled red onions lends brightness and acidity. Finally, a delicate leaf of cilantro crowns the bite, its vibrant green a perfect contrast to the deep pink of the onion and the creamy white of the mayo. Beyond the explosion of flavors, the colors themselves (green, white and pink) tell a story pay tribute to the Republic flag of Newfoundland.

.But our amuse-bouches don’t just pay homage to the past, they also celebrate the land that surrounds us. We are passionate foragers, and our woods, meadows, coastline and barrens provide an abundance of ingredients that inspire us daily.

Celebrating Local Flavours from Foraged Wild Foods
One of our amuse-bouches features spruce tip syrup made from the tender new growth of trees just up the road in the woods. The syrup truly captures the fresh essence of the evergreens. We pair it with aged prosciutto, fresh peaches and toasted pine nuts, letting the syrup shine as a bright, unexpected note that surprises and delights the palate. This bite is a reminder that nature itself can provide an endless pantry of flavors that are wild, untamed, and deeply connected to place.

Similarly, another amuse-bouche highlights our dandelion ‘honey’, crafted from the golden petals of dandelions foraged just outside our door. While many see dandelions as weeds, we see them as one of Mother Nature’s special gifts that are bursting with floral sweetness. Our dandelion ‘honey’ is delicate yet complex, a perfect accompaniment to a savory element like aged cheese or a crisp homemade cracker. It’s a bite that challenges perceptions by inviting our guests to reconsider what they think they know about flavor, ingredients, and the natural world.

They are our chance to be playful, to experiment, and to weave stories into our food in the most unexpected ways. An amuse-bouche is, by nature, fleeting—one bite and it’s gone. When we develop new amuse-bouches, we start with a story. Perhaps it’s a childhood memory of berry-picking on the barrens, a tale of a traditional dish reinvented, or a discovery made while walking through the woods. Then comes the process of translating that story into a single bite: what flavors will capture the essence of that moment? What textures will surprise and delight? How can we balance acidity, sweetness, umami, and bitterness to create something harmonious, yet unexpected? It’s a challenge, but one we embrace wholeheartedly.
